What do you mean? Why is counting harder at dinner than any other meal? Are you eating different foods? If you are making the foods yourself, you can use the recipe builder. Are you weighing your foods with a food scale? That will help with accuracy. Are you eating dinner in restaurants? Most chain restaurants have publicized nutritional information.

What do you eat for dinner that makes it more difficult to count, calorie-wise, than other meals?

While you're cooking, list the ingredients on a recipe calorie tracker. Try this: http://www.caloriecount.com/cc/recipe_analysis.php?ns=1

MFP has a recipe builder, so it would be even easier to build and log in one place!

You see, I cook for a big family, so I have a hard time dividing the calories up.

yes, the recipe builder is very useful for that. add all of the ingredients to the recipe builder, divide by the number of servings. I usually try to weigh my cooking pots/pans before I use them and then weigh the same vessel with its contents when I'm done (with a hot pad on the scale, usually).
