I lost 8lbs in the beginning, then when I started walking my dog everyday for 20min I gained 3lbs back. I've been staying within my calorie limit of 1200. I only weigh myself once a week on sunday morning. Is this water weight? It's a little disheartening.

Not enough info to know. Walking your dog is not enough exercise to cause muscles to retain water. So I wouldn't blame that.0
