I like to slice it thick and brush with a little olive oil and lightly salt then bake until tender. Top with some homemade marinara (store bought way too sweet

) and either mozzarella or some feta then broil until cheese melts - only a minute or two. It's delicious.

Sichuan Eggplant--this is my favourite (and my wife's). You don't have to deep fry the eggplant first, but it just adds authenticity. Recipe is from our favourite cook book.

I like to grill it in slices. Make caponata it is great as a side, relish or topping, or pasta sauce. I love baba ganoush, it has a little more fat but is great dip for pita. I have had it with a miso glaze in sushi restaurants. Love it in moussaka too.
