Yet another chicken breast recipes thread

In for ideas... Bored of the same old marinated chicken. Heads up, I don't like the texture of chicken in the crockpot.

I usually alternate between spices, marinates, and seasonings, I've done sweet and sour chicken and curry... just kinda bored with it all (and I've had enough Mexican food lately to last me for a while too).

So.. any tasty ideas? I love stuffed chicken breast but don't really want the extra breading calories right now... just not sure it wouldn't be too dry if I baked it without breading it?

    Cook it with some garlic rosemary and a touch oregano, salt to taste. Make up some tzatziki sauce with plain yogurt, seeded and diced cucumber, finely minced garlic clove or two if you really like garlic and a little salt. I also add a little dill to mine but that's optional. It's better to make the sauce several hours ahead of time so it can all mingle. Put shredded chicken and some lettuce tomato onion whatever that type of veg you like, more cucumber too maybe, then top with some sauce. You can also use a tortilla or skip it all together and have it as a salad.

    Kind of a version of chicken gyro.

    Slice some fresh ginger and cook in a pan with garlic and onion and a large onion and a little oil.
    Add chicken breast. At the end, add soy sauce and scallions.

    I've been thinking of using chicken breast (pounded flat) as pizza crust...since I can't have dough anymore...

    i like to make a spicy peanut sauce and make lettuce wraps with grilled chicken, lettuce cups, zuchinni, shredded carrots, green onion, cilantro. If im feeling real fancy il make crispy rice sticks.

    i also make a lot of breaded chicken because it fits my calories, tastes good, and doeant need a sauce.

    Simmer it in some jarred pasta sauce and then top with a bit of shredded cheese!

    I'm really lazy. I usually sear my chicken in a skillet with a little bit of Pam/olive oil (depending on whether I need help getting more fat in for the day). More recently I've crushed a few grams of Total cereal as a mock breadcrumb (less than 15 calories extra, and it helps with some of my micros) or slathered my chicken in lots of mustard, and they've both been pretty good.

    Mmm...tzatziki! I make it with 1c plain yogurt, .25c mayo, grated cucumber, garlic, salt, and a bit of lemon juice. Yum!
