Hi all,
Need some easy new ideas for vegetarian meal ideas to get all my protein/nutrients for the day. Often lacking protein, iron, and getting too many carbs.

Never wrong to be getting too many carbs! If you need protein and some fat, I suggest buying some tofu and trying recipes with that!0

This. I'm always over my carbs and sugar but that's doesn't bother me since most of the time of you don't count natural sugar from fruit and potatoes, I'm under my goal.

Eat one or two hard boiled eggs daily.0

Eggs, cottage cheese, veggie burgers, beans, tofu, lentils, Greek yogurt...all high protein, low fat (read the labels!), and low carb (again...read the labels).0

Easy vegetarian meal ideas include:
Pot (or crockpot) of chili w/ beans and a side of cornbread
Tempeh tacos w/ all the fixins - lettuce, cheese, tomato, avocado, salsa
Spinach lasagna
Soups & stews - with potatoes, lentils, barley, beans, tofu
Chickenless fingers (do you have an Aldi nearby? They've rolled out chickenless fingers & patties under their Fit & Active brand and they are delicious!) with roasted fresh vegetables & dipping sauce
Pasta dishes
Breakfast for dinner - waffles or omelets w/ fresh fruit
Vegetarian pizzas - use naan for the base and pile on vegetables, nuts, chickpeas, cheese
