So I'm a stay at home mom. I clean around the house and play with my 3 year old son. Some times we go to the park and play. I also go to the gym mon-Fri for about 1.5-2 hours. I run on the elliptical for about 30-45 min and burn about 360-450 calories . So am I considered light active or sedentary?

When in doubt go with sedentary.

Remember that your 'activity level' doesn't include your intentional exercise, ie, your elliptical time. It only includes what you do during the day as part of your normal activities. :) Intentional exercise is counted separately.

This. I'm set to sedentary and let my fitbit sync to include additional exercise/movement.

If I'm at sedentary I'm only at 1200 calories and I'm 24years old 216lbs and 5"6. And I don't think that's enough. I also have it set to lose 2 lbs a week

You don't have to pick 2 lbs a week. I'm a little shorter than you but started out the same weight as you. I picked 1 lb a week and eat 1600-1700 and lose 1 lb a week as expected. It's a lot more sustainable.

I would set to sedentary, add in your exercise on the elliptical manually, and eat back about 50% of the exercise calories it gives you (MFP can slightly overestimate). Do that for a month and then re-evaluate.
