How about potato leek soup and shepherd's pie?
For the soup I use 3 leeks, 2 potatoes, 1 onion, and 4 cups of broth (chicken or veggies), then just let everything simmer until the potatoes are cooked, then blend... and add a bit of milk if it's too thick.
For the shepherd's pie I just use 90% ground beef that I brown with onions, then add some tomato sauce (a small can), then add frozen peas and carrots, then layer in a pan with some mashed potatoes on top (which you can make as high calorie as you like, really).
Obviously it's not 'authentic' though...0 -
Irish stew? Colcannon? Soda bread? Anything with Guiness.
FTR shepherds pie is English (and is only shepherds pie if you make it with lamb. If you make it with beef its cottage pie) and Cockaleekie soup is Scottish. But whatever floats your boat..

Look around the Daily Spud. They've got a boxty recipe I plan on trying some day. There's also this fry up of caloric sin, and apparently black pudding is a superfood now, so everything's kosher (or something). Also, the internet tells me this brotchan roy soup is ancient and authentic, so it must be true! I can tell you that it is amazingly delicious, so I highly recommend trying it.0

DS did a school project on Ireland, and we were supposed to also bring in a sample food from that country. We brought in colcannon, which is now a STAPLE food in our house. We all just absolutely LOVE that stuff. Cabbage in mashed potatoes (essentially). Who knew that would be so flippin' awesome??0

I remember making colcannon once actually. Totally forgot about it and totally delicious0

Victory , colcannon is mostly made with Kale, a bit of onion, and lots of butter, not cabbage. At least it is in our house!0

Partner doesn't like cabbage so kale is something I'd be using if I made it. Kale wouldn't be authentic Irish I'd say though0 -
