Weight loss and net calories.

Hi guys,, this is my first post on here and Im hoping you can can give me some much appreciated advice on a couple of issues.
I have what is best described as :skinny fat" and 7 weeks ago I decided Id make some changes and purchased a fitbit hr,fit bit scales and a nutri bullet.
I also overhauled my empty carb junk food lifestyle,purchased tapout xt(which is a ripper lol),and got of the couch.
I was 79kg at 180cm with a body fat of 23%, and 7 weeks later have lost 5kg,and 3.6% bodyfat(don't know if that's decent or not lol).
My question is with my goal of losing .25kg per week, Ive found that eating clean is a lot harder (quantity wise ) than eating dirty and after my 5km walk/jog and tapout my net calories are around the 1000 to 1300 mark,even if I eat over the 1970 calories that is my set goal.
I hopped on the scales today and I had actually put on .5kg in aweek!!!, could it be because Im not actually eating enough calories and my metabolisim is adjusting down?
Some days my net was 200 to 600, my question is is it the net calorie figure that I should be most concerned about,or do I just stick with my 2000 odd calories per day?

    unlikely your metabolism is slowing down, but how accurate is your calorie counting?

    Are you using a food scale, logging EVERYTHING and eating some of your exercise calories back? Having low NET calories is a very bad idea, it might be doable to start with but over time you will find you lack energy - and you need that energy to fuel your workout. You should be aiming for 1970 calories NET (although sometimes this can be tricky to achieve as calorie estimations from workouts are notoriously bad- most people aim to eat 50-75% of the calories back).

    Try a handful of nuts, peanut butter (can't stand the stuff myself), almonds, avocado, etc. to bump your calories up in a good way.
