BEETS?

I have a bag of beets in my fridge that I would like to prepare.

How do you like your beets best?

Any easy, simple recipes you use?

    I love to peel whole beets, cut them in half, sprinkle a tiny bit of EVOO and sea salt and roast them in the oven until soft and slightly browned.

    Steamed beets are like candy! (We got a stacking bamboo steamer at our local Asian market, or there are the stainless ones that fit nicely inside the pot.) Steaming veggies is surprisingly more quick than roasting or boiling & it keeps so many more of the nutrients in... People request beets at our dinner parties now & we snack on the leftovers (if there are any.) :) P.S. apparently they are great in smoothies; still have yet to try that.

    Roasted with EVOO, fresh cracked pepper and rosemary. Om nom nom.

    I made them with EVOO, salt, pepper, fresh rosemary and sliced scallions!

    Roasted in the oven on 375 and they were really tasty!

    The only thing I didn't like was now my fingers are pink from peeling them, lol!

    I seriously put them in my smoothies. I do all veggies in my smoothies. Sometimes I even juice them. :) I am actually not sure if I have ever ate them cooked...haha.

    I've just started putting beets in smoothies. They are surprisingly good! I steam them in my rice cooker, unskinned, if only so my very old VitaMix can process them better. I didn't know how good beets were till I made them for my mother, following her directions. She just boils them like potatoes, skin and all. The skin is edible once they're done but you can peel it off easily if preferred. She likes them sliced cold, and I have to admit they are quite good warm, too. WAY way better than those nasty canned things that hubby likes!

    I like them shredded up and put into salads. They really are good raw. I also like them in juices.

    I like them roasted...and beyond that one can do many things with them, all of which are wonderful. Roast and shred, roast and eat like potatoes, roast and dice and let cool for a salad...there are so many ways.

    Borscht!

    Peeled beats, beet greens, carrots, onion, other leftover veggies, stock or stock cubes....pressure cooker, immersion blender....the chopped dill and if necessary lemon juice to sour a bit. Serve with sour cream. Yummy vegetarian soup. Can add a can of beans (or soak you own) or lentils for more protein.

    My Baba would probably roll in her grave about the immersion blender....but we prefer it that way...fusion tradition!

    You could make it with meat and a meat stock as well...we had always used pork bones to make a stock. Wouldn't purée it if using meat...bit would shred the veggies...a more chunky soup.

    Otherwise, cut tops off, wash and then roast in the skin (put in tinfoil...I don't add anything) . The flavour intensifies. I then will slice as a side for dinner...leftovers are made into salads...last one was a green chickpea (could use edamame), beet and feta with a simple basalmic dressing.

    I cut the tops off, put them in foil and use a little olive oil and salt. Roast in oven @ 375 for 40 mins. Very Yummy! I eat them on spinach salads with some goat cheese.

    Grated in salad with other veges (carrot, zucchini) or just on their own, with a simple balsamic dressing, maybe with some toasted pumpkin seeds or walnuts & some feta cheese. I also put them in smoothies - yum! Tasty and lots of fibre. Not sure if anyone has mentioned but don't be alarmed if what comes out the other end is beetroot coloured!!

    Sliced, oven roasted for crisps, grated to make veggie burgers (normally with parsnip and sweet potato )

    I spiralize them and sauté in olive oil til soft then add some red wine vinegar when I eat them. I crave beets....just bought more today!

    This is exactly what I do. Have them as a side or add to a cold salad.
