Quinoa recipes?

Hi all!
I really want to begin meal prepping in advance and the first thing I want work with is Quinoa..
What are your favourite quinoa salad recipes? That are preferably easy and cheap

I like to make Southwestern Style Quinoa. Not sure on the exact amount of quinoa you want to use. But I take a can of corn, rinse it and toss it in. Same with black beans, low sodium of course and rinse well. Then I chop up some red onion, bell pepper and tomatoes. I add in some lime juice, cumin, salt and pepper. Then top it all off with diced avocado.

mmmm this sounds delicious. Could be a bit cheeky and add some feta cheese. thank you for the ideas

Cheapest and simplest is to treat it like a side dish just like couscous. Boil it up with a little onion, salt, a teaspoon of olive oil, a tablespoon of lemon, and pepper.

I had tried all sorts of recipes that called for way shorter cooking times and the quinoa always turned out grainy and bitter. This recipe is fluffy and wonderful. well worth the extra time to cook it. It is a plain recipe, so I take this and will put stewed apples with cinnamon for breakfast, make tabouli out if it.. the possibilities are endless.
