Vegetarian Nut Burger

This is a really easy vegetarian burger recipe that will satisfy any carnivore. Recipe serves 8
1/2 cup brown rice long grain
1 1/2 cup water for rice
1 cup cashews
1 cup walnuts
1 tbsp chili powder
3/4 tsp dried oregano
3/4 tsp paprika
1/4 tsp cayeanne
3/4 tsp dried basil
1 cup shredded cheddar
salt and pepper to taste
Olive oil
1) Cook the rice removing from the heat with a little excess water remaining in the pot.
2) In your food processor, chop all the nuts.
3) Transfer to a large mixing bowl and add in the remaining dry ingredients.
4) Then add the rice with the extra water. Gentle fold in being careful not to over work. It's important that the rice is warm...not too hot or too cold...so the nut mixture can incorporate properly. and not fall apart.
5) Heat extra light olive oil to medium in a fry pan. Cook nut burger until golden brown and crispy.
6) Remove from the pan. Nuts burn in a flash. It's pretty tricky trying to warm the middle of the burger without burning the outside.
7) Finish in a 350F oven for 5-7 minutes.
Serve on a toasted low fat english muffin with spicy sour cream and/or pico de gallo.

Fairly literally any wet ingredient? It's made of grains, so they stick together pretty well... when you stir in the chopped nuts, oil, and in my case, some flour (or rice flour or whatever) you don't really have to worry about it.0
