Mama Dee's Pizza Casserole

Hi Everyone: being diabetic I'm always seeking ways to use cauliflower as my new "white". Psycologically I need a white on my plate i.e. potatoe, rice, pasta. Cauliflower has taken that place. When the guys in the family order pizza I throw this together and am TOTALLY satisfied:
Cauliflower - (amount according to satisfaction) steam it a little first unless using frozen. Mash a tad then place in casserole dish:
Saute: 1 lb. ground beef, Pepperoni (cut in half or quarters), can diced tomatoes, Pizza sauce - I love Mama Mary's brand then add other toppings you enjoy.
Dump altogether in casserole dish and top with mozzarella cheese or a pizza blend
Bake 400 degrees about 20 minutes or till its just golden brown on top
I'm still trying to figure out the correct nutritional tally but getting rid of the pizza crust and having all the toppings and flavor of pizza is my primary goal. Enjoy!

    Sounds awesome! Just weigh each ingredient and add them to the recipe builder for the right nutritional information.

    I made one a while back that had roasted cauliflower as the base.

    Oh, mine - sliced into 8 pieces, ended up at 144 calories per serving.

    Also, radishes work well as a potato sub in beef stew, or turnips/daikon as fries.

    I just made turnip rice

    You can roast them, shred them and cook them like hash browns, or throw them into your beef stew instead of potatoes. We just did that last night!
