low carb-low GI dinners

Im on a very low carb low gi diet but find it hard to come up with new recepies i dont eat beef or pork just lean meats like chicken seafood turkey...any good ideas

I did low-carb for a while. Cauliflower is your friend. You can shred it with a cheese grater and eat it like rice, mash it and eat it like potatoes, turn it into pizza crust, just eat it plain with cheese and a little salad dressing, etc. Probably the most versatile vegetable out there.0

High protein diets are hard on your body similar to high carb. I eat high fat, moderate protein, and low carb. I feel great! I'm not eating much and no lack of energy or hunger. High fat fish, meat, avocados (they have high carb too), olives, and nuts. I can only tell you what works for me. Good luck.0

Low carb includes dark meat chicken, eggs, avocados, full fat yogurt, mayo, full fat salad dressing. Lots of leafy green veggies like kale, spinach, romaine, cabbage. Also yellow squash, zucchini, green beans, cucumbers.

I made a big crockpot full of cabbage beef soup and it was sooo good- my whole family loved it . I got it from a low carb eating group on Facebook I joined. Look on FB if you have one, and join a low carb group- there's a lot, and a lot of support and recipes! Pinterest too, has a lot of low carb recipes.0

This is perhaps the best recipe I've come up with, I do a lot of meal prep so I cook a batch of it and put it in containers
Red Coconut Curry Shrimp Soup/Gumbo: makes 12 servings
2 container (33 oz ea.), Cooked Jumbo Shrimp - Frozen
4 Cans 13.oz Thai Coconut Milk (Unsweetened)
2.30 container, Red Thai Curry Paste, Authentic
5 Tbsp, Organic Extra Virgin Coconut Oil
4 tsp, Beef Base No Msg Added
2 cup, Water
Cayenne powder
1. Put coconut oil into large pot and set to medium
2. Once the oil is melted and heated, Add Red Curry Paste + 1 tbps Cayenne powder to oil.
3. Saute for a few minutes
4. Add coconut milk + water + beef base (can add more beef base/cayenne to taste)
5. Keep on medium heat for about 30 mins then let simmer.
Thaw/cook shrimp separately, portion sauce/shrimp into 12 containers, these are the ones I use http://amzn.com/B005SX9Y4C

Here is one a friend sent me. I haven't tried it just yet but it sounds good. I also love fried cauliflower. You can fry it in a pan or deep fry it. both ways are a good snack or side dish.
LOADED CAULIFLOWER
You won't believe it's low carb!!!
Ingredients:
1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
6 Tbs chopped Chives
1/2 cup Mayonnaise
1/2 cup Sour Cream
2 cups Colby Jack Cheese ( may use cheddar)
8 oz container sliced mushrooms (I don't use mushrooms in mine)(optional)
Directions:
Preheat oven to 425°
In a large pot boil water and cook Cauliflower for 8 - 10 minutes, drain and let cool.
In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3 tbs chives, 1 cups of cheese,mushrooms and cauliflower and mix well... place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles. Bake for 15-20 minutes until cheese is melted. top with remaining 3 T chives and serve.
