low fat cheese? I use nutritional yeast a lot but honestly I don't think I'd want it in lasagna.

Well, you can use low fat cheese and low fat ricotta in your lasagna. Fat free is disgusting though so I don't recommend it. Or just skip the cheese altogether and just put some veggies but then it's no longer lasagna...

For what it's worth, I've yet managed to make lasagna that was satisfying for less than 500ish calories a serving.

I use cottage cheese instead of ricotta.

Thank you. I guess low fat Philly cheese would be ok.
Never thought about cottage or ricotta but up for giving it ago

I use fat free ricotta cheese and an egg, season it with salt, pepper, garlic powder and onion powder. It comes out REALLY tasty!

Well ricotta is what usually comes in lasagna, lol.

But calories are similar for cottage cheese/ricotta/cream cheese anyway. I ate fat free of those for a while but yeah, the extra calories for low fat are really worth it, IMO (heck even full fat sometimes).

I also use nutritional yeast a lot and it has the bonus of added protein, but not appropriate for this dish's flavor profile.

I agree with all the other votes for lower fat cheeses.
