Shrimp and pasta salad

Ingredients

1/2 cup of barilla plus pasta (cooked)
8 medium shrimps boiled (Throw them frozen in boiling water, boil for 3 min take it out of the pan and put it in some ice water)
1 medium tomato (diced small)
1/2 fresh garlic clove (minced)
1 fresh scallion (2 tbsp) (sliced small)
2 tbsp fresh cilantro (or parsley) (minced)
1/4 red, yellow or red pepper (or all three of them if you are making more servings :) )
1/2 lime (fresh)
salt and pepper to taste
olive oil 1/2 tbsp

Cut the shrimp in half then just mix all the ingredients in a bowl. Chill for at least 15 min. (Its great the next day too).

* Depending on your calorie goal you can up the shrimp and pasta a bit and still have a healthy meal. You can also play a lot with this recipe. Sometimes I make it with chicken only or even chicken and shrimp. I have made it with canned tuna and it tastes good too, I just leave the tomato out because I dont like tuna with tomatoes :). To make a bigger batch just double everything but the lime. I would add lime juice little by little and see how it tastes, and remember that after you chill it, the lime taste will be a bit stronger.
