Our families go to fav is Chickpea Shwarma sandwhich from the Minimalist Baker.

I make a salad of quinoa, black beans, and corn (1/2 cup each) on a bed of arugula with olive oil and lime juice.0

- I put black eyes peas or navy beans w a half bag of spinach or kale with one chopped onion and spices; salt, pepper, garlic and onion powder all in the slow cooker and eat it w hot sauce or toast.
- Tofu vegetable stir fry; firm tofu cubed, onion, mushrooms, peppers any other vegetable u want, tad of oil, spices and soy sauce and vinegar. Eat alone or with rice.
- Lemon potatoes and carrots- spray a baking pan, cut potatoes in wedges or slices, add baby carrots, extra virgin olive oil, salt, pepper, oregano and fresh lemon juice.0 -
There are many lovely recipes floating around the Internet. I usually try googling for something with specific ingredients in mind. Some websites have also listed the best recipes for whatever occasions.
Also, what I love to do is turn "regular" recipes into vegan versions by substituting the meat/dairy/eggs. Like lasagna with textured soy protein and vegetable cheese, next month I'm trying out potato salad where I'll be using vegan mayo, homemade pizzas with potato cheese in place of regular cheese (blend up some cooked potatoes and drizzle that on the pizza and then throw in the oven - looks a lot like cheese!), this week the bf made us chili con soy protein... There's endless opportunities.0 -

I try to include as much protein as possible in my meals so one of my favorites is an Asian broccoli salad. It's edamame, broccoli, green onion and peanuts in a peanut sauce. The sauce is your standard sesame oil, soy sauce, rice vinegar, ginger and garlic, with 1/4 peanut butter.0

While it's possible to get high protein meals as a vegan, many vegans tend to get most of their macros in carbohydrates. I get about 50-60% of my calories from carbohydrates myself. As long as you're meeting your needs for protein, I'm not sure why you would need your meals to have a higher percentage of protein than carbohydrates. Is this for a specific fitness goal?0 -
Hello, everybody! So I am sharing here my diet issue in hope somebody might have experienced it I follow a vegan diet plan, but not loosing any weight and what I figured out is that I need to go Low Carb to start seeing results. Low carb and vegan is for me like a love-hate thing and whenever I log food on MFP I notice that I have loads of calories to eat, but a ridiculously low amount of carbs available.
Long story short, any Low Carb vegan recipes you like? Love to hearing back from you! Lavinia0
