quick chicken thigh ideas please! No grilling though

I've got chicken thighs thawing and can't grill them (hubby had grilled chicken for lunch-hmmph). Any quick suggestions since I want to eat NOW?!?! (in other words, no simmering, braising or crock pots-no time for that!). Oh, and we're having Italian tomorrow night and had pasta last night so need to be different!

    Pan "fried" with lemon pepper...

    Cut it up into small pieces & stir fry it w/ some teriyaki or soy sauce, maybe some orange juice/ginger - whatever you have in the house that has an asian flair. Add veggies if you have them in the house & serve w/ rice or wrap in a tortilla or eat plain. Once you cut up the thawing chicken you don't have to wait for it to thaw the rest of the way to stir fry it.

    alice into strips and do a stir fry with lotsa broccoli and mushrooms, a lil soya sauce, etc etc to make a fast healthy main dish, served on brown rice, baked sweet potato or rice noodles... yum!

    When I'm pressed for time, I throw a few thighs or breasts in a glass oven safe pan, with some cut up potatoes, baby carrots and onions. I then pour a Herb and Garlic marinade (I like Diana's) over everything, and bake for 30 minutes in my preheated 425 degree oven (time may vary depending on your oven).

    De bone them and throw in a skillet with a little EVOO (Extra Virgin Olive Oil) and whatever spanish or heat flavors you like. I love putting some garlic (dried or fresh), onion (dried and fresh), cilantro (dried or fresh), and a little bit of cayenne. Cook until done then throw it on a butcher block chop the heck out of it to your liking then you can do one of two things:

    1. Throw it on a mixed green salad with some salsa and some avocado for a Mexican Chicken Salad.
    2. TACO NIGHT!!! Grab your corn tortillas (steam them by wrapping them in a towel and microwaving for a minute instead of frying them) and some lettuce, tomato, corn, anything you want to add to your tacos have at it. Be sure to heat up a bean to go with for more fiber and protein!

    or, last but not least

    3. Mix in your favorite stir fry veggies at the last minute and throw the whole thing over a little rice (white or brown your call)

    There you go three different ideas for dinner and all using your chicken thighs!! You got me hungry now...LOL

    Sitr fry or fajitas are always great and easy and you can make them with whatever you have in the house!

    Thanks so much, the stir fry sounds like the "winner, winner, chicken dinner"! Off to check the fresh veggies-hope there are some left, tomorrow is grocery shopping day! Thanks everybody.
