Avocado & Corn Salad

Serves: 8

6 cobs of corn, husked
1 1/4 cups finely diced red onion
2 limes, zested and juiced
1 tsp salt
1 small red or green finger chili, finely diced
3 large avocados, medium dice
1/4 cup salsa
1/4 cup finely chopped fresh cilantro

Heat barbecue to high, grill corn until lightly charred, about 5 - 7 min. Cool, then slice the kernels from the cob into a bowl. Stir in the remaining ingredients and serve.
