Turkey meatloaf

Clean and lean turkey meatloaf: 8 slices, 221 calories, 12 carbs, 6 fat, 20 protein per slice.

I made some changes. You will see them

Ingredients:

1 large onion, chopped (1 1/2 cups)
2 garlic cloves, minced
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 1/2 tablespoons Worcestershire sauce
1/3 cup fat-free, less-sodium chicken broth---- (I used 1/4 cup 2% milk)
3 tablespoons ketchup----(I used 1/4 cup of my homemade spaghetti sauce)
1 3/4 pounds ground turkey, 97% lean----(I used 1 pound 94% turkey and 1lb ground turkey breast)
3/4 cup dry breadcrumbs
1 large egg, lightly beaten
1 large egg white, lightly beaten----(I used 2 whole eggs)

Preparation

1. Preheat oven to 375°. Put oil and onion in pan and cook, stirring frequently, until soft, about 5 minutes. Add garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper; cook, stirring, 1 minute. Stir in Worcestershire sauce, broth, and 1 tablespoon ketchup; transfer mixture to a large bowl, and cool.

2. Add turkey, breadcrumbs, egg, egg white, and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper to mixture in bowl, and mix well. (Mixture will be very moist.)

3. Cover a baking sheet with aluminum foil, and coat lightly with cooking spray. Form the turkey mixture into a loaf, and place on the pan. Brush meatloaf evenly with remaining 2 tablespoons ketchup. Bake 1 hour or until thermometer inserted into center registers 170°. Let meatloaf stand 5 minutes before serving.

I cooked the onion in Pam in the microwave. Mixed everything except turkey in a bowl then added turkey and mixed until combined. Put into a loaf pan. I will post pics and review later.

    I made this for the first time a month ago and it was so delicious I've made it two more times since then! This is coming from someone who grew up hating meatloaf. The boyfriend and I really enjoy it, and it's got a good amount of protein.

    Made this for supper tonight and it was excellent. Served it with mashed sweet potato and green beans. Thanks for sharing!

    Glad you guys are enjoying it! Just curious. Did you make it as written or with my changes?

    I do mine pretty much just as the original is written. The only differences are I use a little more Worcestershire, and I'm not sure what % fat my ground turkey is, but it's the butterball brand that comes from Sam's.

    I made yours as written except I used all egg whites as I ran out of eggs!
