Salads with leafy green veggies, tomatoes, red cabbage, cucumbers, broccoli florets and red onions. Add a low fat creamy Italian. You can also add feta cheese, turkey and ham rolled up, boiled eggs, and bacon bits.
Veggies are full of Vitamin C and E and manganese, zinc, iron and if you want you can add some nuts. All of the above is a good low fat and calorie meal. Enjoy.

As long as you keep carbs per meal below dr recommended limit, the meal is diabetic friendly. The usual limit is 40-60, but depends on how your body responds to different foods, so takes a bit of experimentation. Pairing carbs with protein helps too.
To keep it simple, check what are the average recommended portions regarding carbs and do not exceed this. And of course no added sugar, including no sugar in sauces.

Pork chops with very large portions of sauteed zucchini, yellow squash, and onions.
Also a salad of spinach and tomatoes with full fat salad dressing.

Here is one I have tried and like very much.
    http://skinnyms.com/quinoa-shrimp-paella/

I make it on Sunday and take a portion into work each day. It can be reheated in the micro wave or eaten cold.

I would also recommend looking on Pintrest for ideas.

    Regards
