I make fantastic cheesecakes. White chocolate one with an Oreo crust. A pumpkin one with a shortbread crust. And I can control the ingredients and to some extent the calories. Better than any I've had out. Btw, they're actually pretty easy to make.

In an Italian restaurant I worked at many years ago they made theirs fresh with an old recipe.

No ridiculous waste of space/taste crust of graham or anything of that sort.

Just pure, lightly sweetened, luscious, rich, creamy cheesecake.

They did offer a fresh raspberry reduction to those who like sauce.

    It needed absolutely no sauce.

Never had another that even came close.

    But... I love the crust!

I like my cheesecake plain, dense, and with no crust of any kind. I haven't been able to find any like that in years. Believe it or not, Captain D's used to have the very best. It was pure bliss.

Cheesecake Factory cheese cake is mass produced crap ( but it's effectively a fast food restaurant that charges you to sit) . A real homemade cheesecake is a thing of beauty,

The Red Velvet cheesecake from 'Cuisine from Beyond".
The author of that book is awesome, too.
