Cauliflower Love

Just had to share how much I LOVE LOVE LOVE cauliflower. I just roast the heck out of it in the oven (drizzled with a little olive oil and salt) and it's so satisfying to chew, and low in calories . . . YUM.

    I do SO much with cauliflower I absolutely love it! Cinnamon/nutmeg spiced maple cauliflower at breakfast, garlic roasted for dinner, buffalo baked cauliflower, mashed cauliflower, cauliflower sautéed in leftover bacon or steak grease after roasting, pizza, rice alternative in some dishes....I absolutely love it and its versatility!(:

    My dh and mil make fried cauliflower. It's so damn good that I have dedicated an entire garden bed to growing just cauliflower

    I do the same but also add broccoli and sometimes asparagus spears. Sprinkle with a little parmesan and garlic powder before roasting, and dip into ceaser dressing.

    Yum to all! I have my own way of cutting up a head of it, but other suggestions welcomed! That's the only slightly annoying part (but totally worth it).

    I'm always worried about the nutrients being cooked out being in the oven for so long.. I leave mine in for 30-35 minutes, until they're crunchy.

    I always eat my cauliflower raw. I've got a head in the fridge now. After reading this post I think I'll try roasting it.

    after raw carrots and spinach, raw cauliflower is the best raw veggie.

    I'm not the biggest fan of cauliflower (watery cauliflower cheese is disgusting!) but I've found that I quite like it as a puree - steamed in the microwave, then pureed with a little bit of butter and milk added, it's a great side dish.

    I believe Under Armour actually mentioned cauliflower as one of the top foods that helps MFP subscribers lose weight and keep it off. I'll have to look for that article but it came out in the first quarter of this year, 2016.

    When I have a few extra calories and want a savory treat I will "rice" up a head of cauliflower, cook it until tender with a tbsp of olive oil and then melt in 2 oz of cream cheese and 1/2 cup of shredded cheese. Throw in a few other veggies for fun. YUM! Super creamy and tasty.

    It's typically done in 10 for me, roasted.

    Whether it's pureed or roasted, add a drizzle of white truffle oil to it. A-MAZING.

    So i was thinking of baking with some cauliflower and wanted your imput if this would come out good or not. I want to keep calories down so was thinking of making a pumpkin spice type bread thing. Here's how, let me know if you think it will come out or be dry or any thoughts.
    6 oz of steamed cauliflower
    a little almond milk for pureeing/consistency of cauliflower
    60g pumpkin puree
    46 grams egg whites
    baking powder
    Stevia/Swerve/zero calorie sweetener
    Cinnamon
    nutmeg
    mix together, put in a mini bread loaf metal pan thing
    bake for about 30 minutes on 350 degrees
    You think this will come out dry? Hoping the pumpkin puree will make it moist. Any thoughts?

    Hey, it's worth a try! I've never used pumpkin puree, but I have used unsweetened applesauce in baking - to replace oil in box recipes. Let us know how your recipe comes out. All the ingredients sound good together.

    425 F, without the convection.

    for the donuts:
    70g riced cauliflower
    8g vanilla protein powder
    1 egg white
    3g coconut flour
    12g pb2
    1 tbsp sugar free jam
    1/2 tsp baking powder
    2 tbsp almond milk

    for the topping:
    6g pb2 mixed with water
    1/2 tbsp sugar free jam mixed with a tiny bit of almond milk

    microwave cauliflower for 2 minutes to get it soft, then mix all ingredients except toppings in a food processor. bake in donut pan at 350 for 10-15 minutes or until lightly browned. drizzle jam and pb2 topping

    I think it sounds great! Maybe add some vanilla - that will enhance the flavours more, especially since cauliflower is so bland.

    I've baked with pumpkin before and it's always come out super moist. Would love to know how it turns out!
