Hi,
My worst time of day, as is for many, is when I Get home from work. I give my kids supper, but like to eat later with my husband. But I absolutely have to eat something then... What are the lowest cal roasting veg that will keep me going for the next couple of hours? I am happy with any and every veg... not fussy.
Or if you can suggest other ideas to eat then that are lowish calories and easy to prepare in advance?
Thank you so much

My mom makes this amazing roasted vegetable thing. it's broccoli, cauliflower, and carrots with some olive oil drizzled over and garlic powder, black pepper, and a dash of salt. I could probably live off of it.1

We love roasted brussel sprouts. Yum! So good. My kids love them. Broccoli and asparagus are great too.
ETA: I forgot about Kale. It is so good roasted too!1 -
Broccoli! We sprinkle minced garlic over it, and a tbsp of olive oil. Then we roast for 20 min and squeeze fresh lemon over top. AMAZING. I could eat a whole plate .
Brussels sprouts are another favourite. And asparagus!
Veg + olive oil + garlic + salt and pepper = love.

Zucchini and peppers. I'm eating some at this exact moment.1

Very low in calories: asparagus, bell pepper, broccoli, cauliflower, mushrooms, green beans and zucchini are all low calorie. Root vegetables such as carrots, parsnips, beets, carrots are slightly higher. Sugar snap peas and brussels sprouts also slightly higher. All of these are significantly lower in calories than potatoes, winter squash, and sweet potatoes. Hope this helps!1

Roasted veg are great, but don't discount the crunch factor of raw veg. I can (and do) eat an entire cucumber, a few carrots, some celery... It takes a longer time to eat raw veg, too, so it "feels like" I'm eating more than I am.1

I love roasting peppers and red onions too - such a tasty mix!
But heck I'd just roast anything. Yum.1 -
I roast zucchini, cauliflower, yellow squash, red peppers, red onions and asparagus. I have a bowl every afternoon mixed with kimchi.1
