So my Fitbit is linked to MFP & logs the calories burned from my steps. I've also been doing Daily Burn. Do I log my exercise from Daily Burn in addition or would that be doubling up? It's just that in some of the workouts I'm sweating & breathing hard & my heart rate is elevated but I'm not necessarily taking a lot of steps.

Does your fitbit have heart rate? If it does, don't log exercise separately as that is doubling up. If it doesn't have heart rate function, go ahead

If it's anything like my Apple Watch the HR recorded during non normal cardio will not measure accurately. When I do resistance training it shows me with a heart rate of about 50, which is probably close to death.

No it doesn't have a heart rate monitor. It's just the simple clip style

You can add it in the fitbit app, just make sure the start and end times are right. It will overwrite the data it has with what you supply it for that time, so no double dipping.

Then you can add your workouts without worrying about doubling up.
