Low carb meals that are filling?
I've been struggling to lose weight and friends suggested I should give low-carb a go. But I've been a carb-lover my whole life and don't have any recipes/meals that I know, so I've basically been living on eggs, yoghurt, meat and cheese (which is getting boring pretty quickly!)

The thing with low carb is that you feel full very quickly, so your portion sizes reduce. This can seem daunting to begin with, but if you go true low carb (20g a day) you will find that you are always satisfied after meals and never hungry.
My advice, keep it simple.
My daily menu is typically:
Breakfast: Bacon & scrambled eggs
Lunch: Homemade mini crustless quiches or cold meat / tuna
Dinner: Chicken Breast / Steak and a few low carb veggies (I tend to stick to Mushrooms, asparagus & zucchini 100g of each)
Snacks are a handful of nuts with a few grams of 90% chocolate or a sugar free jelly.
This has been working for me for over 5 months now. 50lb down and I train 5 days a week.7 -
For me personally, "a filling low carb meal" is an oxymoron unless it's at least double the calories of a usual meal. I don't feel satisfied unless every meal has some kind of a starch. If you have been on low carb for a while but still feel hungry you may be like me, so keep that in mind.
Now if you are looking for volume, many vegetables are good on carbs and can be fairly versatile, and many common foods can somehow be made low carb. For example: burger on lettuce instead of a bun, cauliflower crust pizza (shudder), cauliflower mash...etc.

For me a good deal of the satiation factor with lower carb eating comes from ingesting a lot of non-starchy vegetables. Not only do they give a lot of bulk but also they provide a wealth of nutrients that fulfill the body's needs. Aim for two to three cups of cooked vegetables - whether you do things like mashed cauliflower or spaghetti squash as direct substitutes for more traditional carby dishes or simply have a large portion of steamed, roasted, or stir-fried veggies. Raw vegetables such as salads you will want more like 4-6 cups. It will look like a lot, but you will be full and satisfied when you are done.0

Weirdo that I am, nothing satisfies me except protein, not veggies, fruit, or fat. I make protein powder pancakes that seem kind of high carb for a low carb diet, except that most of the carbs are fiber. Protein powder bread is good too. I sometimes forget it's low carb and think I shouldn't be eating it.1

Diced mushrooms and green onions
Stuff into red or green peppers
Add shredded cheese (Mozzerella or cheddar)
Bake on 350 in oven until cooked
(Cook on marinara sauce if you want)

Try making faux-tatoes -- use cauliflower instead of potatoes, cook it soft, then cream in a food processor with a bit of coconut or almond milk, a bit of garlic and salt, and whatever else is to your taste. If you have room in your food plan, try a little parmesan. They make a satisfying sub for mashed potatoes. One of my favorite meals is to steam salmon and baby bok choy in n Asian worth and serve it over the fauxtatoes with the poaching liquid. Totally gourmet and satisfying.

I like to serve Sloppy Joes (homemade, ketchup, mustard, pinch of sweetener, garlic) over mashed cauliflower. That plus a cole slaw made with balsamic vinaigrette is a very tasty and very satisfying meal.0
