Tosca Reno - The Eat Clean Diet guru packs this:
2 apples
2 cups salad greens
3 oz salmon nicoise with lemon juice
1 cup mixed pepper rounds
1 cup cherry tomatoes
2 Ryvita slices
1 cup hummus
1 cup of unsweetened almond milk
Easy enough?

I usually carry a big cooler when I take my kids out - to the beach or pool - so we have healthy food and aren't tempted to buy the crap food they sell at the stands.

    I bought her original book, and have started to make a lot of changes. I pack a cooler for work and then try to have a sensible dinner. Can you give me some ideas of how you do your lean protein/complex carb combo? For instance, what do you eat your hummus with? I try to do cottage cheese and tomato, apple and peanut butter (did NOT like almond butter!), pear and walnuts, etc. I want to expand my options, just not sure what to pair up. Thanks!

    For hummus in particular, or nut butters, I eat rye crisps. Ryvita is the brand she mentioned. Very clean for a "processed" cracker. Minimal ingredients. =)
