Two "desserts" UNDER 100 calories per serving!

Hey all,

In the interest of sharing, here are two things we've made in the last few days that are yummy and under 100 calories per serving (ie, 1 piece).

Oatmeal Crumble Muffins:
crumble:
30g brown sugar
2 tbsp butter
1.4 oz whole wheat flour
.75 oz rolled oats
pinch salt

Muffins:
1.75 oz rolled oats
1.75 oz ap flour
1.75 oz whole wheat flour
1/4 tsp baking soda
1/4 tsp salt
1 oz butter
1/2 oz olive oil
2 oz apple sauce
1.25 oz brown sugar
6 oz yogurt
1 egg, whisked

Preheat oven to 350F
Butter & flour one or two muffin pans generously
Place oven racks in top third of oven

Crumble topping:
Use a fork to combine oats, sugar, salt, flour
Add butter & stir
Place bowl in freezer for 10 minutes

Muffin batter:
combine oats, flours, baking soda, salt
Melt butter in small saucepan, remove from heat & add sugar, applesauce, oil
Whisk in yogurt and then egg
Pour wet over dry mix & stir until JUST combined

Pour batter into tins, 3/4 full each. Break up crumble & sprinkle over tops of each muffin

Bake 18-20 min or until clean toothpick - turn once in the middle.

Let cool 1 minute then turn out onto towel on plate


Add blueberries, strawberries, cherries, or dried cranberries for other flavor

Add lemon zest, orange zest, cinnamon, etc for other flavor

Each muffin has 72 calories, 2.8g fat, 1.3g sat. fat, 12.1 mg cholesterol, 21.8 mg sodium, 42.2 mg potassium, 9.6 g total carbs, 0.7g fiber, 3.4g sugar, 1.6 g protein (I made a recipe using the above recipe into MFP to get info)

Nestle Toll House Cookies - Lightened up!

1 oz unsweetened applesauce
2 tbsp unsalted butter
.57 cups all purpose flour
1/4 tsp baking soda
1/4 tsp salt
.2 cups granulated sugar
.2 cups honey
1/4 tsp vanilla extract
1/2 large egg
2.9 g milk chocolate chips

Just mix the dry ingredients first, then add the wet (one bowl method is fine) and beat at medium speed. These are REALLY good if you zest in some orange or clementine while mixing.

Bake at 375 until lightly brown (mine stayed very puffy) and hard to the tap - about 10-12 minutes.

The recipe made 11, with the following per cookie:
81 calories, 2.4 g total fat, 1.4 g sat. fat, 15 mg choles., 101 mg sodium, 14.2 g total carbs, 9g sugar, 1g protein

They are really sweet though, so you could probably cut back a bit on the sugar if you wanted. The recipe is basically one-fourth of the Nestle bag's recipe - with applesauce for half the butter. Other adaptations could include a 1:4 ratio of whole wheat flour, adding ground flax seeds, adding dried fruit, adding nuts, etc.
