Also, you might add some fish and/or vegetarian options - beans (chili, burritos, more), soy (veggie burgers, veggie dogs, tofu, tempeh, seitan).0

I really like Morningstar Grillers Original. The macros are good for me, 5g of carbs, 6g fat, 15g protein and 130 calories. My hubs eats two and I do as well on occasion if calories/hunger allows. They do wonderfully in the oven and get nice and crisp.

ETA: My hubs just made spicy ground pork patties with lean pork that were awesome on salad or as a sandwich. Just mixed red pepper flakes, paprika, garlic, file, and I'm sure other stuff in the ground meat and made patties. He also grinds our own beef and we cook that up and eat 2 or 3 servings each out of that over a couple days.1 -
@shinycrazy Thanks for this information! I will check out this brand. Great macro profile the Morningstar Burger has!0

I use chicken on weekends only. Week days are for pork, beef, salmon, and sometimes shrimp. I don't want to get bored of my small repertoire of chicken cooking skills.0

Dinner the other night was crockpot balsamic beef roast. I also do a lot with very lean ground beef, have created my own (healthier) crockpot variant of Olive Garden's Zuppa Tuscana (using sausage), and love shrimp and scallops.0

I get TONS of recipes from Pinterest! If you check out my food diary I have a lot of recipes on there from the past 2 weeks. The ingredients aren't listed since I saved them as recipes but feel free to send me a message if any spike your interest. And if my diary isn't open to the public (which I don't think it is) feel free to send me a friend request
A few things I've made: Chicken & Shrimp Coconut Curry, Mango-Jalapeno Lamb Meatballs, Turkey Meatloaf (I add different sauces to give it a BBQ flavor, or Asian flavor). I also love making kabobs with flank steak, shrimp, and veggies. Salmon (again, I'll add different sauces or marinades to mix up the flavors. Straight-up lemon pepper and garlic is good too).
I've also made a low-cal BBQ sauce and a cauliflower cream sauce (comparable to a light alfredo) to make chicken more interesting without using jarred sauces that have a lot of sodium and sugar.0 -
In the past week we have had Chicken Caprese, Cashew Chicken, grilled Ribeye, Beef Stir Fry, Beef Fajitas, tonight we had pizza (the sons had pizza, I had pizza topping casserole), tomorrow night we are having Caramelized Onion and Bacon Smothered Pork Chops and Friday night we will have sub sandwiches (our grocery store does footling specials on Fridays).0

I like to prep a black bean/chick pea salad
- 1 Can of rinsed black beans (reduced sodium)
- 1 Can of rinsed chick peas (reduced sodium)
- Red onion/cilantro to taste
- Taco / fajita seasoning
- Shredded chicken ( ) or without is still really good!
I also LOVE making lean beef or turkey meatballs over bed of sauted zucchini.
Avocado tuna salad
I'm going to love this thread! Thanks for the great ideas everyone!0 -
I use a countertop foreman grill which I love, so I mention it because of the fish. Once it's hot I throw the fish on, close it, and it's done in 1-2 min. First time I've ever been successful with fish! This method works for any filet or steak cut of fish0

If you're getting tired of chicken, why not try cooking it a different way? I often slice chicken breasts into thin slices, marinate it in an egg/corn starch mix then stir-fry it in a well-seasoned wok with either fresh stir-fry veggies or as part of a low-fat/low-sodium chicken fried rice. The chicken fried rice usually makes enough for 4-6 meals.0

A big pot of veggie chili! Beans beans, tomatoes, carrot, onion, jalapeno, whatever is laying around, lots of chili powder and some of the soy tofu crumble stuff from Boca. If I want it with meat instead, cubed pieces of steak are the only things I'd bother putting in there, hamburger does not add enough taste to make a difference.
It just gets better and better for a few days.

You didn't ask me, but I do veggie burgers as well. The recipe I always use is from a website called Cooking Whims. You could probably find it easily by Googling: Cooking Whims - Whip it up Wednesday - Chickpea Tahini Patties
(I'd post the actual recipe, but I'm on my phone right now. It's delicious! )0 -
I make chicken salad and I don't like mayo so I use avocado instead. I also make chicken burgers with lime and chilies in it. It's very good. I also make lettuce wraps with ground chicken.0

For those considering fish:
Salmon Patties/burgers - I make a big batch and freeze. They also keep 4 days or so in the fridge with no problem. I eat them plain -hot or cold, on sandwiches, crumbled in salad. One of the few ways I've found to batch cook fish.
Sometimes I used canned salmon (it's next to the tuna. You could also make tuna patties.) Add some egg, binder (panko, cracker crumbs, potato flakes if you want it to be GF), finely chopped onion, salt, pepper, and jalapeno. Form into patties and sautee. I've also baked them to experiment with lowering the calories, but they seem to get a little dry that way. I think some people add mayo as well, but I never really have that on hand.0 -
Others have mentioned this, but we make a lot of taco meat (turkey or beef) and eat it with rice, beans, veggies or on taco salad. I also make LOTS of different kinds of meatballs. Italian turkey meatballs over zoodles, asian chicken meatballs over brown rice, lamb greek meatballs with cucumber, tomato and feta salad. If you aren't on pinterest you should check it out, I find a lot of food recipes that way. Lots of blogs post their meal prep pictures and you can find inspiration from them.
ETA: I get a lot of recipes from skinny taste because she puts all the nutritional information on there and it is usually very tasty.0 -
evolutionfx wrote: »Tired of Meal Prepping with Chicken!....Baked chicken, grilled chicken, boiled, slow cooker, etc! You name it, I have prepared it with chicken as the "star"--headliner! And, eating it everyday for lunch and dinner is becoming boring. lol
What is your "go-to" meal or eats that you like to meal prep to last through the week? Any recipes or recipe websites, you like to follow?!
Any suggestions are appreciated in advance, because this brother needs a life raft quickly...because I'm sinking!

Chicken is pretty gross so I don't blame you lol try using beans like making southwestern black bean bowl with some tricolor peppers in there and cojita cheese or some seitan sauages (30g protein per sausage) with some zoodles and marinara.0
