Holly's Vegan Tacos

Just thought I'd share one of my favorite dishes!!! Plus, you don't even have to be vegan to eat 'em! 
Holly's Vegan Tacos
For a single serving:
1/4 c. 10 Minute Whole Grain Brown Rice
1 tsp. Ortega Taco Seasoning
1/2 c. Meijer Organic Black Beans (rinsed)
1/4 c. Meijer Frozen Golden Corn
1/8 c. Galaxy Veggie Shreds-Cheddar Flavor
5 Great Value Medium Pitted Olives
1 tbs. Tofutti Sour Cream
2 tbs. My Homemade Jalapeno Salsa (simply made with roma tomatoes & jalapenos- 4 cal. / serving)
1 c. Iceberg Lettuce
2 corn tortillas
I cook the rice (adding the seasoning once the water boils). While it's sitting I warm up the corn & beans.
Add corn, beans, salsa & cheese to rice.
Mix & let sit.
Chop lettuce, put onto plate/bowl.
Slice olives, add to lettuce.
Pour taco mixture over lettuce.
Top with sour cream & mix.
Warm up tortillas.
And, bon appetit! :-)
P.S. I would've also used a tomato, but I only have 1/2 of one which I'm saving for tomorrows salad.
I use a spoon & add what I want to the tortillas, there's the tacos.
I eat the rest as a taco salad, in order to save calories on the tortillas.
Total calories = 524

The fun part is that you can add anything that sounds yummy! :-)

Double checked my recipe, since I usually add food from my phone I tried to change some things on the site but they didn't stick. So, changed things on my phone, & the actual calorie count is 486! :-D0
