This is an amazing miso soup recipe that a friend gave me. Very low calorie but very filling as well. When I made it this weekend..I added more veggie broth and also put in some tofu as well. Gave it more body. I am sure some of you will come up with other variations. My friend even put cauliflower in hers.

Miso Soup Plus

2 tablespoons chopped shallots
1 teaspoon minced fresh ginger
1/2 cup each thinly sliced cabbage and carrot (I used red and green cabbage)
1 teaspoon olive oil
2 cups vegetable broth
1 teaspoon almond butter
2 tablespoons yellow miso (I used red miso instead)

(I added tofu and extra veggie broth to mine..just made more of it.)

In a medium saucepan, sauté shallots, ginger and veggies in olive oil until
crisp-tender, about 3 minutes. Add broth and almond butter and simmer gently
for another 3-4 minutes. Add miso to sauce pan, stirring well. Heat for
another 5 minutes, but do not let soup boil.

Calories per serving is 126. If you ate it all ..it would only be about 271 calories. So very good!!

    Mmmm...I love miso soup, but I've never tried almond butter in it. I'll have to try that sometime.
    BTW, I keep preshredded veggies for cole slaw or broccoli slaw around for things like miso soups and quick stir fries. I make dishes like that often enough that it really cuts down on all the chopping!
