A lot of people here wish to have your problem all you really need to do is eat more. Easiest way would be eating calorie dense foods, junk food and you could add in some mass gainer whey powder shakes.1

At some point you're just going have to get calories in. When you're in a surplus it's easy to hit your micro/macro nutrients with "healthy" food. And these are the foods that might make you feel too full to hit your goal as well. Don't be afraid to use discretionary calories for treats and calorie dense food.0 -
calorie dense foods + calorie surplus + structured lifting program + hit macros and micros1

what is unhealthy about peanut butter?
as long as you are meeting your micro nutrient goals there is noting wrong with calorie dense foods like peanut butter, ice cream, etc...you are going to have a hard time gaining weight on a diet of vegetables and chicken..1 -
Some foods like ice cream are calorie heavy so they take up calories with poor macros1

How long have you been lifting? I used to notice very increased appetite after my lifting sessions, not so much now. Just try to get in some calorie dense foods: whole milk and dairy products, even cream and heavy cream, nuts and seeds and their butters, olive oil, coconut oil, real butter, marbled meats, dark meat, dried fruit and trail mix...
What kind of food do you like?0 -

There really are no unhealthy foods. There are really only unhealthy diets. Peanut butter, store bought or self made, is very calorie and nutrient dense. High in unsaturated fats which can help reduce cholesterol. If you concentrate on getting mainly nutrient dense foods (fruits, veggies, whole grains, unprocessed meats, fish, and dairy) and occasionally through in some enjoyment food, it will make it easier to get your calories and be healthy. The above link has some food suggestions and strategies to help you out.2 -

If you don't want store-bought peanut butter, are you willing to make nut butter at home? Starting with fresh peanuts, almonds, cashews, or even macadamia nuts, process in blender or food processeor until you have the consistency you want, and voila! Fresh nut butter. Short term you can leave it out of the refrigerator, but the oil will go rancid eventually, so I keep mine in the refrigerator. Yummy!
