Adding in more veggies

I am not a big fan of veggies. I can eat fruit all day but veggies not really. I am wondering if anyone has any tips and advice on how to include more veggies in my diet. They say if you prep them so you can just grab and eat you will eat them more but if I had both veggies and fruit already prepped I would take the fruit. I do make green smoothies but I know that isn't enough veggies for the day.

    I like my veggies baked on a sheet pan or in a cast iron skillet with a little olive oil. The key to cast iron is once seasoned never let soap touch it.

    How long do you bake them for usually? I unfortunately do not have a cast iron pan.

    I do the same but i just use a baking sheet & foil. Add some thyme or rosemary to the olive oil that you toss the veggies in. Bake at 425 for root veggies and start checking them after about 15 minutes. If I add broccoli or cauliflower or brussel sprouts I usually have the oven at 345 for 20-25 (they will brown faster than the root vegies).

    I typically use yams, yellow potatoes, broccoli, brussel sprouts, and red onion. This gives a good mixture of flavors.

    I just spread my veggies, usually broccoli, cauliflower and asparagus on a regular baking tray, spray with olive oil then sprinkle garlic powder, pepper, lemon juice and Parmesan cheese over them and bake till crunchy, then dip in ranch sauce.
    Stir fry's are also a great way to get your veggies in, I use chicken breast, stir fry sauces and pack the wok with as many different veggies as i can cram in. Key to this is to add the veggies in the last couple of minutes of cooking so they don't go soggy.

    I've been working at replacing my carbs with veggies. So zucchini replaces most of my pasta now (slicing or spiralizing it) and I also eat it as a toast/hash brown replacement along side my eggs. I find that I don't miss the carbs after having done this for a few months now.
