Pura Vida Vegetarian chili

I am slowly working on perfecting my vegetarian chili. Here is where I am so far. Any suggestions for additions of anything I would love! My recipe makes about three cups, or three servings. So lunch for three days for me.

1 can of red beans
1 tomato diced
1/3 can of jalapanos chopped
1/4 cup of tomato sauce
68 grams of chopped fresh green beans
1/3 cup white onion
1 teaspoon of cumin, paprika and garlic
2 teaspoon of chili powder
1/3 teaspoon salt

I eat one serving and top with frenchs yellow mustard. It's amazing, and one serving is only 144 calrories. Fabulous. I plan on trying to add some other veggies like zucchini and carrots in the future. I try one new thing every time just to mix it up. Pura vida!

    Sounds good!
    I would add a few tablespoons of ketchup and some frozen corn!
    Try dry beans if u have the time, red and pinto.

    I'd replace the green beans with corn, and add some kale.

    Sounds really good!! I'll give it a try. I think I'll do the ketchup and corn, too....have to think about the kale, but I'll bet it's good also!!

    I put roasted butternut squash chunks and some baked sweet potato in mine. The squash retains its shape but the sweet potato will eventually dissolve and add some sweetness and thickening. I also put in frozen kale. I don't use corn because I think the corn/sweet potato combo would be too sweet, but without sweet potato, I would put in corn.

    Corn was my next thing to try throwing in. And I love the sweet potato idea.

    Mushrooms! They add good substance and texture to chili, whenever I make it mushrooms help me feel fuller a little longer!

    I sooooo want to like mushrooms and just don't. So jealous of those who do.
