I was telling myself this tonight as I made steak and shrimp fajita salad with sour cream, pico, lime, and queso! I made this based on what I was craving but knew if I went to my favorite Mexican restaurant it would be a lot more calories! What did you have for dinner tonight?     Must be something in the air. My evening snack is Artisan multigrain bread with melted Dill Havarti cheese and crispy center cut bacon.

    Dinner was on the go so I had a 7 inch club sub from the Getgo.

    Pasta with chunky beef and veggie sauce. Full plate just over 500 cals. I'm stuffed. Yum!

    A bit over a quarter pound of herring saturated in oil, and a protein/coconut oil shake that I came up with on the fly.

    Local grocery store sells the jalapeño cheese salmon burgers....AMAZING, also had corn and a salad

    A bit over a quarter pound of herring saturated in oil, and a protein/coconut oil shake that I came up with on the fly.

    I'm curious about using the coconut oil. How often do you use it and does it make you feel fuller?

    More full? Not that I've noticed, at least not versus any other oil. I use it all of the time to jack up fat content in cooking and shakes. Any other benefit is secondary.

    It's very important to eat well! We are worth it, and we need it! Yesterday it occurred to me why I used to think food and eating was so boring - the food I ate was terribly boring :s Now I make an effort to prepare fresh, varied and tasty food, and I love eating! Go figure :smiley: Yesterday I had risotto for dinner - with edamame, mushrooms, celery, onion and garlic, and parmesan. I have leftovers for tomorrow :D Today I will have oven baked cod with oil, boiled potatoes, curry sauce and grated carrots, a new favorite.

    Oh that looks excellent. I'm trying to work out what I'm having for dinner, it includes edamame and I haven't worked out beyond that!

    I had potato, pea, and chickpea curry with wild rice mix for dinner, and a slice of chocolate silk pie with a glass of red wine for dessert.

    Exactly!!!! And I've never tried curry with fish. Sounds great!

    Last night we had chicken with kasha/vegetable stuffing and a side of spicy red beans.
    Tonight will be pulled pork sandwiches w/ slaw and a side of fresh sliced vegetables from the garden tossed in olive oil and spices.
