Lentil recipes needed (NOT soup/ no meat)

Please, I eat lentils because they are a good source of plant based protein. But soup is getting old.

Is there some other ways that you like to make them?

    I made this recipe for lentils with Swiss chard and feta recently. My husband and I both thought it was a keeper. You could use spinach or any kind of greens in place of the Swiss chard.

    Just made this last night. I add 1t garam masala. Can serve over cauliflower rice.

    I cook up some lentils and mix it with rice, veggies, soy aminos and nutritional yeast. Sometimes I just cook up a bowl of red lentils and stir in some curry and ginger. Soo good!

    I usually just cook mine in chicken or vegetable broth.
    That said, know that to get 25g protein from lentils takes 1.38 cups which is 448calories vs. 3oz lean beef at 180 calories.

    Red Lentil Hummus, from martha stewart
    yields 1 1/4 cups, taks about 10 minutes to make

    1 cup cooked red lentils
    1 clove chopped garlic
    1 tablespoon tahini
    3 tablespoons extra-virgin olive oil
    2 tablespoons fresh lemon juice

    Pulse everything together in a food processor until smooth. Season with
    Salt and peppr to taste.
    Additional flavoring ... sprinkle on some Za'atar spice blend.

    Serve with radishes, or whatever you like with hummus.

    Lentils and Wild Greens
    (adapted from Verdura by Viana La Place)

    14+ leaves of radish, mustard, or other tender bitter green, stems trimmed, and
    leaves stripped from ribs
    salt and freshly ground black pepper, to taste
    3 T. extra virgin olive oil
    1 onion, diced
    2 garlic cloves, minced
    1 celery rib, diced
    1 small carrot, diced
    1 t. finely chopped fresh rosemary
    1 t. finely chopped fresh oregano
    2 T. finely chopped Italian parsley
    2 T. chopped basil leaves
    2 C. green lentils, washed and picked over
    3 small tomatoes, roasted, peeled, and diced
    3 T. lemon juice

    Cook the greens in a tiny amount of water (just what clings to the leaves after
    washing is enough). Add salt to taste and drain. Chop coarsely and set aside.
    In a medium skillet, heat olive oil and onion, garlic, celery, and carrot. Cooked,
    covered, over medium heat until the vegetables are tender. Add the herbs and lentils
    and stir. Let the lentils absorb the flavors for a few minutes, then add 4 C of water,
    plus salt and pepper. Bring to a boil, then simmer, with the pan’s lid partially
    cracked, until the lentils are just tender, (about 30 minutes). About 10 minutes
    before the lentils are cooked, add the tomatoes.

    Just before serving, stir the greens and the lemon juice into the lentil and tomato
    mixture.

    Red Cabbage & Lentils
    This is one of those 'leftover' dinners. It works splendidly, but feel free to use what you have in your garden and fridge.

    Ingredients
    • ¾ cup red lentils
    • 1 wedge red cabbage, shredded (about 2 cups)
    • 6 Brussel sprouts, cut into quarters
    • 1 small carrot, grated
    • 3cm knob raw ginger, peeled and grated
    • 1 heaped Tbln tomato paste
    • 1/3 cup peas
    • 2 tspn chilli paste
    • 1 Tbln coconut oil (or oil of choice)
    • To garnish: ½ cup chopped parsley or celery with some top leaves
    • Salt and pepper to taste.

    Method
    • Cook lentils in 3 cups water until soft (about 15-20 minutes).
    • Heat ½ cup water in frypan, add oil and gently stir-fry all veggies except garnish.
    • Put lid on frypan, but remove lid and give it all a few stirs during cooking.
    • When veggie mix is just cooked, but not too soft, add tomato paste, peas and seasoning.
    • Stir in chilli paste to cooked lentils.
    • Spread lentils on dinner plates, pile veggie mix in middle and top with garnish.

    Preparation: 20 minutes
    Cooking: 30-35 minutes
    Serves: 2-3

    Dahl is such a quick easy dinner to make! I fry up an onion (red works well with red lentils), add a load of garlic, chuck the lentils in, add some veggie stock, Indian spices and half a tin of tomatoes (or enough so the lentils aren't swimming in liquid!) And leave to simmer. Always use the leftovers for lunches through the week!

    Also lentils are great for replacing mince with in chilli. Chuck a load of veggies and lentils together and make a normal chilli sauce and bob's your uncle!

    Another fave of mine is tinned green lentils with Chipotle paste stirred through and an onion and a pepper/capsicum added. Stir for a while until heated through and enjoy! Another easy mid-week dinner or lazy lunch!

    I'm hungry now.

    About the gas: ginger and turmeric together control the gas. About a teaspoon of each. Another solution: fennel seeds, ground or whole. Fennel controls appetite too. Good for weight maintenance!

    Bunch Mint

    For a snack just toast cooked lentils in a dry pan on low/med heat, (I happily use tinned after draining off liquid), until they go crispy and add whatever flavourings you like - think crisp flavourings such as salt 'n' vinegar, black pepper or a bit of chilli.

    I made these today with chilli flakes and poured over a salad I had made - easy way to add flavour, texture and protein.

    Chopped finely;
    Red pepper
    Onion
    Cilantro
    Feta
    (Italian or vinegarette dressing)

    Lentil Salad is SO much better than it should be:

    Mix:
    Brown lentils, cooked al dente
    Chopped carrot
    Chopped sweet onion
    Chopped fresh jalapeno leave the seeds in.

    Dress with mixed:
    Olive oil
    Lemon Juice (bottled is fine)
    Brown Mustard
    Salt
    Pepper, lots of pepper.


    That's all. Really. It is like magic when it comes together. Have fed this to kids, old people, men, carnivores, everyone loves it so much, even the dogs like it, even my cat did. I don't measure anything. It's nice served with a good bread and sharp sharp cheddar cheese.

    The non-vegetarian version is much the same but parsley and bacon I think? I have never tried it like that.
