Exploring vegetarianism...looking for literature .

Hi,
My daughter has not eaten any meat except for chicken for the past 12 months and has done "ok" with getting enough nutrition in her diet, although to be sustainable she needs to branch out with what she eats.
She now feels she can no longer eat chicken, but is not very keen to broaden her horizons with what she eats.
I have always said I will support her choice as long as I am happy she is getting the nutrition she needs.
I think the best way to support her is to lead by example and go vegetarian with her for however long is needed, so that we can explore and learn together and find foods and ways of cooking that suit her and get her used to eating different foods.
I am hoping someone could suggest some books that would be a good starting point or that specifically look at easing into it or even just where to begin. There is so much information out there and lots of recipes, but I cant seem to find something that deals with the basics first.

maybe pick up some vegetarian cookbooks? my current favourite is "Thug Kitchen" https://www.amazon.com/Thug-Kitchen-Official-Cookbook-Like/dp/1623363586 it swears at you (is a gimmick) but the food is delicious, all veg (lots of different proteins options which it explains as well), and the recipes are easy to make.1

This MFP group would be a good place to get information and talk to people that share similar experiences.

As for me, I read alot of stuff online. Be careful though. There's false information out there. If you are vegetarian you will need a B12 supplement and maybe some other stuff. Also get enough protein, so people say you don't need it, but they give vegetarians and vegans a bad name, but that's true for any diet.1 -

Unfortunately there isn't much action on the happy herbivores community here.

Beans, lentils, eggs, tofu, and leafy green dishes. Also include seeds and nuts like chia, flax, sunflower. Some nuts too like almond and peanuts. Broccoli has protein as does all veggies.

@cee134, thanks I have been looking online but there is just too much information for me to decipher what is good and what is bad advice.
I had some blood tests done to check her levels before she stops eating meat completely and all were ok except you guessed it B12, which is right on the limit will look at what we can do here.
@AlabamaMama224, i am pretty sure vegan will be the next step for her as she really struggles with the concept of animals for food. But I am really trying to get her to take it slowly and educate herself so that she can do it properly. She is very passionate, but not disciplined, lol.

We live in NZ where there is a real focus on meat and bbq so it will be a challenge for me, but hopefully this will help her see how important it is to do it right.
