Found this on Pinterest. Genius. Simple. Delicious.
Need:
2 large eggs
2 oz ham
Grease a muffin tin. Line two cups with approximately 1 oz of ham (I used reduced sodium ham sliced medium) in each cup.
Either beat a large egg and pour it in the cup or just crack one right in the cup. (1 egg per cup, although you may be able to get away with less egg).
Bake at 400F for 15 minutes.
I made one scrambled, one unscrambled. I think I preferred the one that wasn't scrambled. The calories etc are for both.
