I made a rice pilaf with wild rice and brown rice in the oven, last time I made salmon.

I used sliced almonds instead of pecans. Everyone loved this rice.2 -
Pretty much whatever you want.
I tend to like vegetables (broccoli, asparagus, Brussels sprouts) and (sometimes) rice.0 -

Baby new potatoes, boiled or roasted in their skins and watercress sauce. Lots of greens - we add asparagus or tenderstem broccoli, whichever is in season. Was last night's dinner, in fact!0

Depends on the marinade/seasoning for the salmon...
Sweet bourbon salmon marinated in Jack Daniels, soy sauce and pineapple juice? Sweet potatoes (baked or roasted with cumin and brown sugar) and corn.
Blackened salmon? Mango avocado salsa with black beans/rice with sautéed squash and zucchini.
Sesame ginger salmon? Asian noodles with snap peas.
Salmon with pesto? Pasta with grilled asparagus, red peppers and artichokes.

Oh yeah and one of my meal prep favorites is to just grill with sea salt, coarse black pepper and lemon juice... Then serve that cold the next day on top of a spinach/mixed green salad with veggies, blueberries, goat cheese and poppy seed dressing...3

Personally - Salmon with a small portion mash potato and broccoli fine chopped with avocado and baby tomatoes mixed and lots of pepper!0

I love zucchini noodles with pesto sauce as a side dish. Kale sauteed in garlic and olive oil is also pretty good!0

yes...this is my fav....next day (or 2 days later) salmon on top of romaine or spinach based salad. Sooooo good...0 -
Everything is good with salmon.
I like it seared in a pan and served with any of these:
Nothing
Lemons
Garlic, walnuts, salt, butter chopped together and toasted in a pan
Kalamata olives and onions
Baked lemon and onion slices
Asparagus
Salad
Mashed Potatoes oh yeah.
Or poached in little packets of parchment, with asparagus and lemon slices, salt and pepper.
But I'd try it with just about anything.

i love it seared in a bit of butter or evoo with capers or kalamata olives, lemon, artichoke hearts and halved cherry tomatoes. served with coconut rice and spinach. ugh. now i'm starving.0

I am really intrigued how many people said mashed potatoes with salmon... It would never have occurred to me to put those together. Sweet potatoes yes, regular russet potatoes no. I don't have a good reason, just didn't occur to me. May have to try it!1

That's what I had last night! Cooked with chopped fresh rosemary on top and a squeeze of lemon. Sides were garlic broccoli and jasmine rice.... yummy.0

Make sure you leave the "FARM' salmon in the grocery store and buy "WILD".
Buying farm salmon is like eating tilapia.2 -

I am famous within my group of friends for the salmon that I make! They're actually trying to get it sold within a local Italian resturant.
2 lbs. salmon
2 eggs, whisked
1 c. Progresso Italian breadcrumbs
1 c. Locatelli cheese
1/2 c. fresh parsley, chopped
2 T. minced garlic
1 T. salt
1 T. pepper
1/2 stick butter, cubed
Preheat oven to 350-degrees. Mix breadcrumbs, cheese and parsley. Dip salmon filets in eggs and then into breadcrumb mixture. Coat thouroughly. Place on greased pan. Add extra breadcrumb mixture to any bare areas. Season with salt and pepper, top with garlic and cubed butter. Bake for 35-minutes uncovered or until center of filet is flaky and light pink.
I usually serve with steamed asparagus, pesto pasta (I live with two fully Italian boys, they love their pasta - I skip this portion of the meal) and a salad.0 -
