Eggs in your diet

I've had a gastric bypass over 20 years ago, but still have problems eating meats. I eat very minimally any red meats or really any meat whatsoever that is not ground or I chew very very well as it will clog my stomach outlet. I have started eating 2 boiled eggs per days, one in the morning and one on a salad at night to add in protein at night. Just throwing this out and see what people think about eating 2 eggs a day.

I think it's a great idea. Eggs were vilified for a long time and modern medicine has come back to the conclusion that they are a great, complete protein source with a lot of vitamins and minerals. Enjoy your eggs!!11

I love eggs!!! Have you tried egg muffins? You can use regular eggs or egg substitute like egg beaters and save a few calories. There is a blog called "The World according to Egg Face" and she has awesome egg muffin recipes and just recipes in general for people who had WLS. Check it out of you need some variety.3

Eggs are a delicious whole food...my wife and I do vegetarian 3-4 days per week and we eat a lot of eggs and we're considering getting chickens in the spring so that we can get our own eggs right here at home...dietary cholesterol really isn't a concern for most people...for most people, dietary cholesterol has no bearing on blood serum levels.7

Keeping chickens is fun. The one thing that annoys me is that they drop off production in the winter so we've had to get more and more hens and then in the springtime we have more eggs than we know what to do with.5 -

I eat eggs almost every day I have a small flock of chickens in my front yard (I live in a tiny tiny rural community). I eat hard boiled eggs as a quick snack or soft boiled/poached/over easy for breakfast or an omelet for any meal! And when we are overrun with eggs, they sell quickly to friends and family! My dietician and doctor both think they are a great source of protein.4
