Healthier recipe choices?

What are some healthier recipe choices? I have a tendency to eat what I think is healthy then learn it had more fat or carbs than I thought. I'm also encouraging my family to join in and will be making a meal Wednesday. I'm afraid healthy = bad taste. Someone have suggestions?

Recipes with simple ingredients can be sooo tasty.
Using fresh or frozen veggies is a good way to get good flavor with the nutrients. I do a lot of raw veggies for my daughter because they have flavor and texture she likes.
Rice is a great idea as a staple to plates (look for brown rice instead of cheap white rice) for a healthy kick and get creative with how to use it. I believe allrecipes.com has a tool that you can enter some ingredients you have and it will search all of their recipes to find matches that use them.
Usually, the sauces will get you on calories and such. Making those from scratch can help cut down on that if you have time. Also, try using a croc pot as a one-pot cooker. You'll discover lots of flavor with very few ingredients. A whole chicken with some vegetables (beans, carrots, potatoes) in a croc pot with some seasoning (I use a lot of Italian seasoning and pepper) is easy, healthy and delicious.0 -

A lot of our "traditional" recipes are calorie & fat bombs. The trick is learning what ingredients to use to get flavorful food. There's no reason for healthy food to be less tasty.
Take, for instance, the standard green bean casserole (beans, cream of mushroom soup, Durkee's onion rings). A can of mushroom soup adds 273 calories and 20 grams of fat. A container of onion rings add 1080 calories and 85 grams of fat.
On the other hand, dressing green beans with some minced shallots and mushrooms sauteed in a couple tablespoons of olive oil is just as tasty and the added fat from the olive oil is mono-unsaturated and only 119 calories per tablespoon. Add garlic or an herb to up the flavor factor.
One of my favorite ways to dress up a bag of frozen green beans is to toss them, hot, in a couple tablespoons each of butter or olive oil, dill relish or minced cornichons, and coarse mustard.0
