Meal prepping

How far ahead do you meal prep? What foods are best to meal prep with? Just curious, I plan to start doing this very soon to help with my busy schedule during the week and just not having much time to make anything.

    I prep all my veggies weekly when I get home from the grocery so we can just get them out and use them making supper (stir fry, sides, soup, stew) or be able to grab a handful for salads, lunches, and snacks. The veg I prep are cauliflower, broccoli, carrots, fresh spinach, onions, Brussels sprouts, romaine lettuce, and asparagus (store the asparagus in a glass with water). We don't use a lot of potatoes but if you are going to prep them, peel, cut them, and leave them in water so they don't turn black. We also make a weekly menu or a list with 6-8 meals that we make the grocery list off of to make sure we have everything we need for those suppers. For us it saves time getting supper on the table in the evening. At first it might seem a bit time consuming but as you do it, it gets easier and becomes routine. Good luck! :)

    I batch cook and freeze in serving sizes for quick grab and go meals. Yesterday was chicken in peanut sauce, chicken corn chowder, and apple pork. Today is Chicken and cheese stuffed manicotti. Can you tell I bought a large package if chicken?

    I will have 24 quick grab lunches that I just need to add some fruit, veggies, and maybe yogurt.

    I'm current doing my prep for the week. This week it is a egg bake casserole which is like a crustless quiche. It's with broccoli, ham, and mozzarella. Along in the oven is a sweet potato in which I'm going to use some left over chili over it.

    I also got a bunch of chicken on sale so I split it. Half of it went into the slow cooker with oregano, cumin, and chili powder with red bell pepper and the juice of 1 orange. The other half went into the oven to bake to mix into salads or to have along with zucchini and/or spinach for the week.

    All of this, took a little less than an hour. That's not including the cooling down time and packaging time.

    I find that eggs and chicken last really well for at least a week, which is all that I'm looking for. I also want things that I can "mix and match" as to not to get bored with the same thing all week long.

    How that helps a bit.

    Same. Mostly soups, stews, chilis, curries, etc.

    I still have some left over chili (two types), pasta sauce, and an amazing roasted vegetable, three cheese lasagna! I don't know why I'm feeling so hungry all of a sudden!

    I meal prep my breakfast and work lunches only. I have been using rotisserie chicken and two veggies and carb and then I do two snacks which is a raw veggie and hummus and a Greek yogurt. It's been working for me. I've lost 10lbs with a 30-45 minute work out. I've done turkey chili too and tuna also. I try to switch it up so I don't get bored. I work in healthcare so sometimes I'm not able to get my snacks in but I try

    I prep lunch and dinners for the week on Sundays. Depending on what I'm eating when I'll freeze certain things and defrost as needed. Lots of individual containers but I'm not worrying what I'm going to eat and it is already portioned.
