Hi All
I found this recipe and just tried it out... it's amazing!!
> 1 banana mashed, 1cup finely grounded gluten free oats (or chunky oats and blend them to powder), cinnamon, 1/2tspn brown sugar or honey.
> mix ingredients together. Grease a baking tray lightly and spoon mixture into individual cookie size portions
>Bake for 10-12min on 200 (or until golden brown)
If you don't like cinnamon, add vanilla, or peanut butter or choc chips or dates or raisins etc...
Enjoy!

Tried this this morning for breakfast. I'm not doing added sugars so I took out the brown sugar and added raisins. They didn't get quite as brown but DELISH!1

I despise bananas, but I make something very similar using mashed pumpkin or mashed butternut squash. I sometimes add shredded coconut chips, nuts, dried cranberries and/or currants. And if I'm feeling REALLY crazy, I'll add a couple of tbsp of curry powder! The sweet/spicy combo is AMAZING!3
