Mini Banana Berry Pies

I have a ton of berries. I've been buying too much I'm sure but I can't help it when they go on sale and I know how good berries are for you! So I've been getting creative in making up things to do with them. I was thinking about blueberry pie and how delicious it is but between just my hubby and I we could not (well, should not!) eat a whole pie by ourselves. I started thinking about mini pies and alternative pie crust options. Then I saw wonton wrappers when I was grocery shopping and that's when inspiration struck.

12 servings | 35 calories ea
1 Small Banana
24 Raspberries
30-50 Blueberries (more if small, less if large)
16 Wonton Sheets/Wrappers
3 Packets of Stevia in the Raw (or 1 Tbl sugar, adds calories!)

Preheat oven to 425° F. Slice the banana into 12 pieces. Fill a 12-cupcake tin with cupcake liners. Add wonton sheets to the liners, pressing down to create a cup. Add one slice of banana, 2 raspberries and 2-5 blueberries to each cup. Sprinkle with stevia or sugar. Slice the remaining wonton sheets into strips and lay them over the top of the pies in a weave pattern (4 strips per pie). Spray lightly with cooking spray then bake for 8-10 minutes or until the crust is browned. Serve warm or cold.

    What a good idea! Were they delicious? You didn't say how they tasted. Also, did the wontons turn out crunchy or pliable?

    mmm this looks good!

    I think they would be good if you blended up a few too and added that to the fresh berries... makes it a little thicker maybe..

    Sorry! Yes they were absolutely scrumptious! The top of the wonton was a bit crunchy. The bottom was pliable but sturdy enough to hold the filling.

    Edit: I've also since discovered they freeze and reheat decently in the microwave. And it goes great with whipped cream or ice cream when served hot.

    You could try bake-able silicon cups? That way you don't need a pan!
