+1 for riced cauliflower, either mixed with rice or on its own. The texture is a little different, but it soaks up flavor just like regular rice does, IMO. Works great in fried rice.

Recipes look really good and I noticed the first one had 800mg of sodium. Is that the soy sauce that makes it so high?0 -

Yes, most likely. I haven't looked at the recipe, but soy sauce is 879mg of sodium per TBSP. I typically use low sodium soy sauce and add regular salt as necessary.

I love sesame oil - it adds such a nice smokey flavor.0 -
Here's one I've tried with a few modifications that's super tasty - I omit the oyster sauce and sub fresh veggies if available, and add extra - steamed broccoli is delicious - I use just a dash of the low sodium soy sauce (But my SO tells my I'm hyper sensitive to salt) so I would just season it to taste. And I use whatever brown rice I have in the pantry.

I make it all the time with Cauliflower. To prepare the cauliflower I just throw the florets into a food processor and pulse until it is in ricelike pieces. Next I throw it into a no stick pan with a tiny bit of cooking oil, salt and pepper. Saute it lightly then toss in the other ingredients you like for fried rice and away you go.2

Nothing wrong with fried rice. Just use a little bit of oil and/or butter and add a lot of veggies.1

In my opinion, it's not that bad. Use brown rice and substitute the soy sauce for liquid aminos or coconut aminos.0

The difference between brown and white rice is really minimal, honestly. Also nothing wrong with soy sauce, or get lower sodium sauce, but at least it has very few calories.0 -
I never used to be into rice but I am addicted now. I know fried rice probably isn't the healthiest of choices so I am looking alternative recipes with similar flavors.
Same. I sub half my usual rice for cauliflower 'rice' and it's just as good. I still get real rice, but get more veggies, too.0
