Recipes for Lentils

Hey, looking for some ideas to use lentils. I bought a bag for a change in my protein and added them to a pot of turkey chilli I was making. This turned out great and I really enjoyed the texture they gave.
If anyone has other ideas for me (can be with or without meat, im not picky) I would sure appreciate it!

I cook mine according to the package with a bit of salt and butter, and then serve over rice or quinoa.2

Hmmm cocoa powder? How did that effect the taste? Really like the look of the recipe and the eggplant!!!1 -
I'm a big fan of Masoor Dal. Here's a pretty easy recipe - don't be scared by the number of ingredients as most are just spices!

It just deepened the flavor. It didn't taste like cocoa at all!2 -

from the same site I also got "Green Lentil Soup with Curried Brown Butter"
I also have a good "Brown Rce and Lentils" from Chef Michael Smith. He also has a recipe for Lentil Meatloaf.
This chef recomments to always have some cooked lentils on hand because they come in so handy ... even to just toss with some veggies and seasonings to turn into a salad. His recoomendation for cooking them is to use 1 cup lentils to 3 cups water and cook till tender, simmered for about 20 minutes.

I make red lentil tacos often. Just cook lentils with taco seasoning.2

I do something similar - but add in cauliflower and sometimes sweet potato...yum1 -
I used to make mashed lentils. I'd boil them and add a little oil and salt and mash them. Was surprisingly tasty.1

Brown lentils: I cook up some spicy Italian sausage, onion, carrot, garlic then add the cooked (boiled lentils). Serve over a little rice plus hot sauce.
Mushroom/lentil loaf. I don't have the recipe handy, but cook up your normal meatloaf stuff - onion, carrot, celery, plus spices and chopped mushrooms. Boil the lentils and add half of the lentils to your food processor with the vegetables and bread crumbs. Form into a loaf, top with ketchup and bake. delish.
Red lentils - yum!! Cook onion, ginger, garlic. Add in red curry paste. Add the red lentils, water, a T of tomato paste, one chopped sweet potato. Cook til lentils are done, then add a can of chopped tomatoes and coconut milk.1 -

I just want to make sure you know there's a textural difference between brown and red lentils...each serves a different purpose. I'd hate for you to try a new recipe using the wrong one. Here's a quick review:

I eat lentils a lot...I get most of my recipes from Pinterest...like thousands of ways to eat lentils.2

Yep dahl with pumpkin or sweet potato is the bomb. I made a mushroom and lentil shepherds pie that was delicious.

I like petite green lentils. They have good flavor and are very healthy for you. They are amazing with any type of smoked ham or bacon, small diced bell pepper/carrot/onion, mushroom, butter, garlic and fresh herbs.
A little Sherry Vinegar goes a long way with lentils!!0 -

I add cooked brown lentils to my vegetable soup. I start with braised onion, garlic, celery and carrot. Add some broth and a can of chopped tomatoes, lots of fresh zucchini and spinach and whatever herbs or spices you like.
