2 clove, Garlic MINCED
1.50 tbsp chopped, Shallots, raw
1 lb(s), Boneless Skinless Chicken Breast

1 tbsp(s), Lime juice - Raw
2 tsp(s), Sauce, fish, ready-to-serve
1.00 cup, Lite Coconut Milk (Canned)
1 tbsp(s), Ginger root - Raw MINCED
1 Pepper, Red SLICED THIN

BROWN CHICKEN IN VEG OIL THEN STIR IN REST OF INGREDIENTS UNTIL CHICKEN IS COOKED...ADD SALT TO TASTE...
4 LARGE SERVINGS ...LIKE A SOUP.... APPROX 271 CALS / SERVING

    I agree with @crazyravr about the full fat coconut milk. If you are worried about calories, just use half as much, as all the lite stuff is is regular coconut milk and water, so you are paying a lot of money for water. You can freeze the remaining half of the can for a later use. However, it does separate in the can so you will need to dump the whole can into a bowl and stir it before before putting it into a freezer container.

    Iporter : I've only used lite coconut milk once (since counting calories) it's okay but full fat is definitely richer I agree
