1.00 cup, Lite Coconut Milk (Canned)

BROWN CHICKEN IN VEG OIL THEN STIR IN REST OF INGREDIENTS UNTIL CHICKEN IS COOKED...ADD SALT TO TASTE...

I agree with @crazyravr about the full fat coconut milk. If you are worried about calories, just use half as much, as all the lite stuff is is regular coconut milk and water, so you are paying a lot of money for water. You can freeze the remaining half of the can for a later use. However, it does separate in the can so you will need to dump the whole can into a bowl and stir it before before putting it into a freezer container.1
