Anyone got some good healthy chili recipes I can make in a slow cooker? Send them my way!

Sweet potato/black bean chili
-2, 15 oz cans black beans
-2 medium sweet potatoes peeled and cut into small cubes
-1 medium red onion diced
- 24oz canned tomato sauce
- 16 oz water
- 1/4 c chili powder
- 1 tbsp cumin
- 1 tbsp oregano
- 1 tbsp paprika
- 1 tbsp salt
- 1 tbsp black pepper
That can turn out pretty hot, so if u don't like a lot of heat u may want to dial back the spices...2 -

This recipe is from the cookbook LooneySpoons collection. Its wonderful! I believe it makes at least 8 servings, at less than 300 calories each.1 -

I like to add pumpkin puree to chili...stretches it some and makes it sweet and kinda earthy.0

I use ground turkey in mine, as well as a can of beans about a cup of frozen corn for sweetness!2

Haha. A 1/4 cup isn't so much (just 4 tbsp). Husband and I like spicy food. I used to use 1/3 cup but had to pull that back some when my toddler started eating the chili. Lol0 -

Frankly, I can't really think of a way to make a traditional chili be particularly unhealthy...I've always thought of it as a healthy meal.4 -
20oz ground turkey
1 15 oz can black beans
1/2 red pepper
1/2 green pepper
1/2 white onion
3 Tbsp Garlic
3 Tbsp chili powder
1 Tbsp ground cumin
1 tsp ground cayenne pepper
1/2 Tbsp crushed red pepper
1/2 cup BBQ sauce
1 12 oz Beer
1 15 oz. Can tomatoes
1 10 oz can tomatoes w/green chiles
1 4oz small can green chiles
1 8oz can tomato sauce
1 6 oz can tomato paste
Brown the ground turkey in a big pot, then add everything, making sure the beer is last. Add the beer to your desired consistency, drink the rest. This will make 8 reasonable bowls, 282 calories, 17g protein, 7g fiber.

I agree with @cwolfman13 . Just about any recipe for traditional chili that I have seen makes a nutritionally dense and healthy meal. I like the idea of adding sweet potatoes. I also like to throw a spoon of chopped up chipotle in adobo in there for a little added heat. That's the great thing about chili. You can pretty much throw anything you have on hand in the pot and it comes out great!0

I have a big 6L crock pot and I usually put everything but the beans in overnight on low, add the beans in the morning and set aside some for eating and can the rest in the afternoon. I always have at least a half dozen 1 litre jars on hand and when I get below that I make another batch. Popular with the kids. Usually around 300-330 calories per half litre.

For added veggies...
I generally grate up one head of cauliflower
Cook/brown meat, then add cauliflower and taco seasonings. (Whatever that is for ur recipe)
Cauliflower absorbs the meat/taco flavor and bulks up the chili, reducing the calories per serving.
I have been doing this for years, and my kids rarely notice.1 -
