Awesome Low-Cal Asian Style Chicken

Ingredients-
2 lbs boneless, skinless chicken breast
1 cup chopped scallions (green onions)
1 cup sliced fresh mushrooms
1 tbsp sesame oil (can also use olive oil)
2 tbsp soy sauce
1 tsp fresh minced garlic
1 tsp fresh ground ginger (can use 1/2 tsp powdered also)
First let me say that if you don't like mushrooms or onions you can substitute them for 1 cup of any other vegetable that you like. Examples would be snow pea pods, thinly sliced carrot, broccoli, or baby corn.
Cut the chicken breast into bite sized pieces and put into a plastic zip lock bag or mixing bowl. Add the soy sauce, oil, ginger, and garlic. Marinade in the fridge for at least 30 mins. When you're ready to cook, heat frying pan and add contents of bag or bowl, sautee chicken until cooked almost through and add the vegetables. Cook until vegetables are cooked but crisp. This can be served over 1/2 cup of jasmine rice or brown rice- or even used on a bed of lettuce as a salad. Either way it is super good and packs only 250 calories for 8oz (not counting rice). This recipe makes 4 8oz servings so adjust as needed. Enjoy!
