What Do You Put In Your Omelette?

I made fajitas early last week, and then my lunches most of the week were scrambled eggs with some of the fajitas mixed in (green peppers, onions, chicken) topped with salsa. Could just top with sour cream or cheese since you can't have tomatoes. Omelets don't have to be pretty, they still taste the same! I've made them with sausage, bacon, diced ham, cabbage, spinach, asparagus, etc.0

Sometimes if I make a rich soup I'll throw in a tablespoon of that into the eggs. Did this the other day with a roasted red pepper soup and Yum!!0

I usually make my omelettes with 2 whole eggs, mushrooms, green peppers, onion and seasonings.
The sometimes items: cheese, spinach or avocado.1 -
