Paneer (homemade) help needed

It freezes well. The ingredients proportions are 5 cups to 2 1/2 tbs. The milk temperature is almost boiling (you cannot keep your clean finger on the milk for 1 second). BTW if you don't have a press (I used a Japanese pickle press) the texture will be quite crumbly.1
